Cheatin' Fudge Brownie Cake

Ingredients
3/4 cup (5 ounces) packed pitted prunes (140g)
1 cup plus 2 tablespoons water, divided (267g)
2 teaspoons vanilla (8g)
1 cup granulated sugar (120g)
1/2 cup skim milk (123g)
1/2 cup egg substitute or 4 egg whites, slightly beaten (132g)
1 cup QUAKER® Oats (Quick or Old fashioned, uncooked) (80g)
1 cup all-purpose flour (125g)
1/2 cup unsweetened cocoa (43g)
1 teaspoon baking soda (5g)
1/2 teaspoon salt (optional) (3g)
1/2 cup chopped nuts (58g)
2 tablespoons powdered sugar (16g)

 

Method
Heat oven to 350°F. Spray 13x9-inch baking pan with no stick cooking spray or grease lightly. Place prunes, 2 tablespoons water and vanilla in blender or food processor. Blend on high or process until prunes are finely chopped. Add remaining 1 cup water; blend until almost smooth. Add sugar, milk and egg substitute; blend until smooth.

In large bowl, combine oats, flour, cocoa, baking soda and salt; mix well. Add prune mixture, mixing just until moistened. Stir in nuts. Pour into prepared pan. Bake 30 minutes or until edges pull away from sides of pan. Cool completely on wire rack. Sprinkle with powdered sugar. Store loosely covered.
